Pogi Kimchi (Whole Napa Kimchi)
Pogi Kimchi is the traditional way Koreans have enjoyed kimchi for generations. Instead of cutting the napa cabbage into bite-sized pieces before fermenting (known as mak kimchi), each head of cabbage is kept whole and seasoned between every single leaf by hand. This method allows the flavors to penetrate each layer while preserving the cabbage's natural texture and crunch.
Because the cabbage ferments as a whole, many Koreans believe pogi kimchi develops a deeper, richer, and more balanced flavor than mak kimchi. When it's time to eat, you simply tear or cut off the amount you want.
One of the best parts of pogi kimchi is its versatility. The large leaves are perfect for wrapping around grilled meats like Korean BBQ, bossam (boiled pork), rice, or tofu, creating the classic Korean "ssam" experience. The full leaves hold together beautifully, giving you the perfect bite with every wrap.
